Abstract: Este trabalho foi desenvolvido com o objetivo de se avaliar a segurança do café verde, comercializado no mercado externo e interno, em relação à produção de ocratoxina A (OTA) por meio da aplicação dos princípios do sistema de Análise de Perigos e Pontos Críticos de Controle (APPCC) da colheita ao beneficiamento dos cafés cereja, cereja descascado e bóia provenientes de regiões produtoras do estado de Minas Gerais. Estudou-se a influência da atividade de água, da temperatura e do teor de água da massa de grãos, bem como das condições ambientais (umidade relativa e temperatura do ar ambiente) em relação à proliferação de fungos toxigênicos e produção de OTA durante a pós-colheita do café nas regiões da Zona da Mata Mineira (Araponga e Ervália), Cerrado Mineiro (Coromandel) e Sul de Minas Gerais (Ibituruna) na safra de 2004 e na região da Zona da Mata Mineira (Viçosa) na safra de 2007. As etapas de secagem e armazenamento foram identificadas como pontos críticos de controle, sendo que o monitoramento do teor de água, da temperatura e da atividade de água da massa de grãos e das condições ambientais, tanto na secagem quanto no armazenamento foi fundamental para se evitar a presença de OTA nestes produtos. Baseado nos resultados da aplicação dos princípios do sistema APPCC, pode-se concluir que é possível garantir a segurança desses cafés, provenientes Zona da Mata Mineira, Cerrado Mineiro e Sul de Minas Gerais, em relação à presença de OTA, adotando-se corretamente os procedimentos de Boas Práticas Agrícolas (BPA) e Procedimentos Padrões de Higiene Operacional (POPH), atendendo-se às exigências do mercado interno e externo, além de contribuir para a melhoria da qualidade e agregação de valor ao produto.
The objective of this work was to evaluate the security of the green coffee, commercialized in the national and in the international market, in relation to the Ochratoxine A (OTA) production, by the application of the hazard analysis and critical control points (HACCP) system principles from the harvest to the processing of the cherries, pulped cherries and float coffees from the coffee-producing regions of the Minas Gerais State. It was studied the influence of the grains water activity, temperature and moisture content, as well as the environmental conditions (relative humidity and the air temperature) in relation to the toxigenics fungi proliferation and the OTA production during the coffee post-harvest in the Zona da Mata region (Araponga and Ervalia cities), Cerrado Mineiro region (Coromandel city) and the South of the Minas Gerais State (Ibituruna city) during the 2004 harvest season and in the Zona da Mata region (Viçosa city) during the 2007 harvest season. The drying and storage of the product were identified as critical control points, knowing that the moisture content, temperature and water activity of the grains and the environmental conditions monitoring, as in the drying as well in the storage, was fundamental to avoid the OTA presence on these products. Based on the results obtained by the application of the HACCP system principles, it was concluded that it is possible to guarantee the security of the coffees, from the Zona da Mata region, Cerrado Mineiro region and the South of the Minas Gerais State, in relation to the OTA presence, adopting correctly the Good Agricultural Practices (GAP) and the Sanitation Standard Operations Procedures (SSOP), answering the internal and external market demands, in addition to contribute to improving the quality and to aggregate value to the product.
