dc.description.abstractA linhaça (Linum usitatissimum L), por conter vários compostos bioativos, vem sendo investigada como um alimento com potencial para reduzir riscos de doenças crônicas não transmissíveis. O presente estudo teve como objetivo investigar os efeitos da ingestão da farinha integral de linhaça sobre fatores de risco de doenças crônicas não transmissíveis em animais alimentados com dietas equilibradas (AIN-93M) e dieta obesogênica (dieta de cafeteria), e ainda avaliar os efeitos fisiológicos entre a ingestão de farinhas integrais de linhaça crua e submetida ao tratamento térmico. Realizou-se um estudo controlado, longitudinal, com duração de 57 dias, utilizando-se 60 ratos machos adultos Wistar. Os animais foram distribuídos em seis grupos (n = 10), recebendo as dietas experimentais: controle-dieta equilibrada: AIN-93M; FLTT: AIN-93M contendo 50% do teor de fibras alimentares fornecido pela fibra da farinha de linhaça submetida ao tratamento térmico; FLsTT: AIN-93M contendo 50% do teor de fibras alimentares provenientes da fibra da farinha de linhaça sem tratamento térmico; CAF: controle dieta obesogênica: dieta de cafeteria; CAFL: dieta de cafeteria + 12,5% de farinha de linhaça; comercial: ração comercial (padrão histológico de roedor). Foram avaliados os seguintes parâmetros: consumo alimentar, coeficiente de eficiência alimentar (CEA), ganho de peso corporal, índices hepatossomático e gonadossomático; concentrações séricas de colesterol total, de HDL, de triacilgliceróis, de hemoglobina total e glicada e as atividades de alanina aminotransferase e de aspartato aminotransferase, teor de lipídios nas fezes e peroxidação lipídica no soro e em homogenados de fígado e de testículo, por meio do teste de substâncias reativas ao ácido tiobarbitúrico (TBARS). O padrão histológico do tecido hepático foi analisado para mensurar a deposição de gordura. Os dados foram submetidos à ANOVA, e os testes de Duncan e Kruskal-Wallis foram utilizados para discriminar diferenças entre médias, adotando-se o nível de significância de 0,05. A ingestão de dieta AIN-93M contendo linhaça reduziu os níveis séricos de triacilglicerol, colesterol total e de TBARS no soro, aumentou a excreção de lipídios pelas fezes e elevou o índice hepatossomático dos animais. A farinha de linhaça sem tratamento térmico reduziu o consumo alimentar diário, sem alterar o CEA. HDL, aspartato e alanina aminotransferases, hemoglobina total e glicada, bem como TBARS nos homogenados de fígado e testículo e índice gonadossomático não apresentaram diferença entre os grupos experimentais. A dieta de cafeteria, em comparação com a dieta AIN-93M, promoveu menor consumo alimentar e elevação de CEA, TBARS do fígado, alanina aminotransferase, hemoglobina total, hemoglobina glicada, maior deposição de gordura hepática e redução do colesterol total. A adição de linhaça na dieta de cafeteria causou os seguintes efeitos: diminuição dos níveis séricos de triacilgliceróis, aumento da excreção de lipídios fecais quando comparados com os grupos AIN-93M e CAF, diminuindo para níveis fisiológicos a concentração da hemoglobina glicada aumentada na dieta de cafeteria. A adição de linhaça não influenciou o peso corporal dos animais, os níveis séricos de HDL e a relação CT/HDL, a concentração de TBARS no soro e em homogenados de testículo, as atividades de aspartato e os índices hepatossomáticos e gonadossomáticos. Concluiu-se que as farinhas de linhaça integral crua ou processada termicamente apresentaram efeitos similares na maioria dos parâmetros avaliados, exceto para a ingestão alimentar, que foi menor para a forma crua, embora esse efeito não tenha resultado em menor ganho de peso corporal. A farinha integral de linhaça induziu efeitos fisiológicos positivos nas duas diferentes condições nutricionais, mas a modulação do perfil de lipídios séricos, considerado um importante fator de risco de doenças cardiovasculares, foi dependente da qualidade da dieta. Quando adicionada na dieta equilibrada (AIN-93M), a linhaça apresentou efeito hipocolesterolêmico, mas na dieta com elevado teor de lipídios (dieta de cafeteria), ela mostrou efeito hipercolesterolêmico, provavelmente por aumentar a síntese de lipoproteínas carreadoras de colesterol. A farinha integral de linhaça também atenuou a glicação de proteínas induzida pela dieta de cafeteria. Esses resultados sugerem uma nova perspectiva para a alegação funcional de alimentos, uma vez que alimentos ricos em compostos bioativos podem apresentar efeitos fisiológicos benéficos, mesmo na presença de dieta desequilibrada.pt_BR
dc.description.abstractLinseed (Linum usitatissimum L.), due to its various bioactive compounds, has been investigated as a nourishment with the potential to reduce risks of non- transmissible chronic diseases. The objective of the present study was to investigate the effects of the ingestion of integral linseed flour on non- transmissible chronic disease risk factors in animals given balanced diets (AIN-93M) and obesogenic diet (cafeteria diet), as well as evaluate the physiological effects between ingestion of raw integral linseed flours and those submitted to heat treatment. A controlled, longitudinal study was performed, with duration of 57 days utilizing 60 adult male Wistar rats. The animals were distributed in six groups (N = 10), receiving one of the experimental diets: AIN-93M; FLTT: AIN-93M containing 50% of the dietary fiber content supplied by linseed flour submitted to thermal treatment; FLsTT: AIN-93M containing 50% of the nutritional fiber content supplied by raw linseed flour; CAF: obesogenic control diet: cafeteria diet; CALF: cafeteria diet + 12.5% linseed flour; commercial: commercial meal (histological standard for rodents). The following parameters were evaluated: food intake, food efficiency ratios (FER), weight gain, hepatosomatic and gonadosomatic indices; serum concentrations of total cholesterol, HDL, triacylglycerides, total and glycated hemoglobin and the activities of alanine aminotransferase and aspartate aminotransferase, lipid concentration in the feces and lipid peroxidation in the serum and in homogenates of the liver and testicles, by means of the test for thiobarbituric acid reactive substances (TBARS). The histological pattern of the hepatic tissue was analyzed to measure fat deposits. Data was submitted to an ANOVA and the Duncan and Kruskal-Wallis tests were utilized to discriminate differences between the averages, using a significance level of 0.05. Ingestion of the AIN-93M diet containing linseed reduced the levels of triacylglycerides, total cholesterol, and TBARS in the serum, and increased the excretion of lipids in the feces and elevated the hepatosomatic index of the animals. Raw linseed flour reduced daily feed consumption, without altering the FER. HDL, aspartate and alanine aminotransferases, total and glycated hemoglobin, as well as TBARS in the homogenates of the liver and testicles, and gonadosomatic index did not present differences between the experimental groups. The cafeteria diet, compared with the AIN-93M diet, promoted lower feed consumption and elevation of FER, TBARS in the liver, alanine aminotransferase, total hemoglobin, glycated hemoglobin, greater deposits of hepatic fat and reduction of total cholesterol. Addition of linseed to the cafeteria diet caused the following effects: decrease in serum levels of triacylglycerides, increase in extraction of lipids in the feces compared with the AIN-93M and CAF groups, decreasing for physiological values the concentration of glycated hemoglobin which is elevated in the cafeteria diet. Addition of linseed did not influence body weight of the animals, serum levels of HDL and the CT/HDL ration, concentration of TBARS in the serum and in homogenates of the testicle, aspartate activities and the hepatosomatic and gonadosomatic indices. It was concluded that the raw or heat processed integral linseed flours presented similar effects on the majority of the evaluated parameters, except for feed ingestion which was less for the raw form. However this effect did not results in greater weight gain. The integral linseed flour induced positive physiological effects in the two different nutritional conditions, but modulation of the serum lipid profile, which is considered an important risk factor of cardiovascular diseases, was dependent on the quality of the diet. When added to the balanced diet (AIN-93M), linseed presented a hypocholesterolemic effect, but the diet with an elevated lipid concentration (cafeteria diet) demonstrated a hypercholesterolemic effect, probably by increasing synthesis of lipoprotein cholesterol carriers. The integral linseed flour also reduced protein glycation induced by the cafeteria diet. These results suggest a new perspective for the functional claim of foods, since aliments rich in bioactive compounds may present beneficial physiological effects, even in the presence of an unbalanced diet.eng
